DOM CHOURIÇO MAGRO

It is a classic of traditional sausages. Made from DOM Almu pork meat, seasoned with natural ingredients and tied by Beira hands, it is then cured in the traditional wood smokehouse, so present in the memories of these people.

Popularly called « chouriço de carne », it is ideal to eat raw or roasted on charcoal.

Ingredients: DOM Almu pork meat, white wine, (SULFITS), salt, dextrose, emulsifiers (E451), sugars, antioxidants (E301, E331), paprika paste (bell pepper and salt), water, garlic, conservatives (E250), natural beef tripe.

Store in a cool, dry place.

DOM CHOURIÇO MOURO DA SERTÃ

It is a classic of the traditional Portuguese sausages. Based on DOM Almu pork meat, this sausage is made and cured in the wood smokehouse, traditionally present in the memories of these people. Its natural seasonings, blood and cumin, give it a warm taste.

Popularly called "chouriço das favas", it is ideal to add to stews or simply to roast.

Ingredients: DOM Almu pork meat, white wine (SULFITS), blood, water, salt, garlic, dextrose, emulsifier (E451), antioxidants (E301, E331), conservatives (E250), cumin, paprika (bell pepper and salt), cloves, natural pork tripe.

Store in a cool, dry place.

DOM PAIO DE LOMBO DA SERTÃ

A classic of traditional sausages and the most natural of our range. Made exclusively from whole pieces of DOM Almu loin, coated in the pig's own lard, and sewn by hand. The perfect flavor comes from the meat, which absorbs all the senses and flavors of its seasonings during several weeks, and is then slowly cured for at least 3 weeks in the traditional wood smokehouse, so present in the culture of the people of Beira.

No coloring, thickeners, or additives.

Perfect to eat raw, thinly sliced.

Ingredients: DOM Almu pork meat, loin, white wine (SULFITOS), water, salt, garlic, bell pepper paste (pimento and salt), natural lard.

DOM PAINHO DA SERTÃ

This sausage is very similar to the traditional lean chorizo, but with a softer texture. A combination of flavors in perfect harmony, ideal to eat raw anywhere.

Ingredients: DOM Almu pork meat, white wine, (SULFITS), salt, dextrin, SOY protein, emulsifiers (E451), sugars, antioxidants (E316, E331, conservatives (E250), bell pepper paste (pimento and salt), water, garlic, natural beef tripe.

Store in a cold, dry place.

DOM MORCELA DA SERTÃ

A classic of traditional sausages. Scalded in water and briefly cured in a wood smokehouse. Made with DOM Almu pork meatmeat and blood, its traditional spices with the presence of cumin and a light touch of cinnamon, give it a warm and aromatic taste that comforts the soul. No colorants, thickeners, or conservants. Perfect for baking or roasting.

Ingredients: DOM Almu pork meat, fat, blood, wheat flour (GLUTEN), cumin, white wine (SULFITS), parsley, salt, garlic, cinnamon, white pepper, natural pork tripe

Keep between 0º and 7º.

DOM MORCELA DE ARROZ DA SERTÃ

Scalded in water and briefly cured in a wood smokehouse. Made based on DOM Almu pork meat and blood, combining the harmonizing presence of rice, with traditional spices such as cumin and the aromatic touch of mint, this sausage has an intense but balanced flavor. It has no conservatives, thickeners, or colorants. Ideal for cooking and accompanying seasonal vegetables.

Ingredients: fatty pork meat DOM Almu, blood, rice (7%), white wine (SULFITOS), mint, cumin, garlic, salt, white pepper, natural beef casing.

Keep between 0º and 7º.

DOM FARINHEIRA DA SERTÃ

Handmade, cured in a traditional smokehouse. A simple recipe, made from animal fat and flour obtained directly from wheat milling, with a natural seasoning, which gives it the lightness of taste. No colorants, thickeners, or conservants. Perfect for roasting, or serving cooked on the most varied menus.

Ingredients: DOM Almu pork meat, fat, wheat flour (GLUTEN), water, salt, garlic, paprika (pimento and salt), natural pork casing.

DOM ALHEIRA DA SERTÃ

According to tradition, this sausage was created by the new Christians who, in secret, continued to keep the customs of their renegade Jewish religion in order to make society understand that they were assumed and well-integrated Christians. As Judaism forbade the consumption of pork meat, some of the supposedly newly converted would have invented a sausage where poultry meat would discreetly replace pork, traditional among Christians. DOM Casel recreates the story by adapting the antique recipe to the contemporaneity of Chef Flávio Silva.

DOM PAIO DE PIMENTA PRETA DA SERTÃ

A modern recipe with a strong, intense and truly surprising flavor. Made with natural ingredients, based on DOM Almu pork meat and the combination of spices such as pepper, which give it a unique attitude and personality, satisfying and awakening the most demanding palates. Perfect to eat raw, in very thin slices, with cheese and homemade bread.

DOM FARINHEIRA DE CARIL DA SERTÃ

The perfect combination of the traditional farinheira recipe with the intense flavor of an oriental delicacy. Made with natural animal fat and flour obtained directly from wheat milling. The strong presence of curry in its natural seasoning gives it a hot and strong flavor that awakens and surprises the most refined and demanding palates. Perfect for roasting, baking, or stuffing pork.

DOM FARINHEIRA DE CENTEIO DA SERTÃ

A recipe that combines natural animal fat with flour obtained directly from milling rye. Recovered from the traditions of the people of Beira, this farinheira is a great source of fiber, protein, vitamins and minerals. Excellent to eat without any sin, but with a unique and comforting flavor. Free of colorants, thickeners and conservants. Perfect for baking or roasting.
